Born in Lucknow and rooted in the traditions of Indian cooking, Imam Dasta was built with one simple thought:

The philosophy we follow

From Tradition to Consistency

Spices have traditionally been prepared with patience.

Whole spices were selected, cleaned, dried, ground and sieved carefully, often in small quantities. The goal was never simply to make a powder.

The goal was to preserve flavour, aroma and character.

That philosophy remains at the heart of Imam Dasta.

As our production grew, we faced an important question.

How do you grow without losing what made you special?

Our answer was not to abandon the way we started.

It was to find better ways of carrying the same philosophy forward.

Heat managed while grinding

We introduced practices such as sun-drying and hand-sieving, while developing our own customized grinding process.

Our pulverizer was selected and customized with an important consideration in mind — maintaining temperature during grinding.

Because grinding is not simply about making a spice finer.

Excessive heat during grinding can affect the natural characteristics of spices, including their aroma and volatile oils. Our process is therefore designed to manage heat and maintain consistency while respecting the ingredient.

But technology is only a tool.

No matter how much the quantity may grow, the care doesn't fade away.

From small batches to your kitchen

It was born at home.

Imam Dasta did not begin in a large factory.

40–50 g

Our earliest batches were sometimes just 40–50 grams, prepared in small quantities and shared from house to house.

We started with five products

  • Chai Masala
  • Punjabi Garam Masala
  • Meat Masala
  • Kadhai Paneer Masala
  • Chaach Masala

There were no large production lines.

There was simply a recipe, carefully selected whole spices, a small batch and the desire to make something that felt like it belonged in a home kitchen.

Then people started asking for more.

As demand grew, our quantities grew too.

But we made ourselves a promise:

Growing should never mean becoming different.

Today, we are capable of preparing much larger quantities than those first 40–50 gram batches.

But the philosophy remains the same.

  • The same focus on handpicked whole spices.
  • The same traditional practices wherever they matter.
  • The same attention to aroma, texture and flavour.
  • The same freshly made in small batches mindset.
  • The same care we started with.

The scale has changed.

Why the name?

Why the name “Imam Dasta”?

The name Imam Dasta comes from something very close to the way our journey began.

The traditional hamam dasta — the okhli and musal — has been used in Indian kitchens for generations to crush and grind spices.

In our early days, when our batches were tiny, we actually used this traditional method to prepare our spices.

It represented exactly what we wanted Imam Dasta to stand for:

  • Traditional preparation
  • Careful handling
  • Fresh small batches
  • Authentic flavour
  • Homemade warmth

As we grew, the name became a reminder of where we came from.

A reminder that no matter how far we go, our roots will always remain in the traditional Indian kitchen.

Our approach to spices

Doing the simple things properly.

We don't believe every spice needs to be complicated.

Sometimes the difference is simply in doing the simple things properly.

  1. Step 1: Handpick

    We begin with carefully selected whole spices.

    We believe in starting with the ingredient itself — its aroma, appearance, texture and character — rather than simply starting with a ready-made powder.

  2. Step 2: Clean

    Our spices are properly cleaned and prepared before they become part of a blend or powder. Because care begins before the grinding process.

  3. Step 3: Sun-dry

    Where appropriate, sun-drying is our first priority.

    It is one of the simplest and most traditional ways of preparing spices, and it reflects the patient approach we associate with homemade food.

  4. Step 4: Grind

    Our grinding process is designed with consistency and temperature control in mind.

    We aim to grind spices carefully while minimising excessive heat and respecting their natural aroma and characteristics.

  5. Step 5: Hand-sieve

    We use hand-sieving to achieve the texture and consistency we are looking for.

    Because sometimes doing something by hand takes a little longer — but that extra care is worth it.

  6. Step 6: Blend

    For blended masalas, the proportion of every ingredient matters. The objective isn't to make one ingredient dominate. It is to create balance.

    Every batch follows a defined recipe and proportion, prepared with the same care and attention that traditionally goes into making masalas at home.

  7. Step 7: Pack

    Finally, the product needs to reach your kitchen in the condition in which we intended you to experience it.

    Because making a good spice is only half the job. Keeping that goodness until it reaches your kitchen — and eventually your plate — is the other half.

What makes it homemade?

Homemade isn't just about where something is made. It is about how you think while making it.
